Ushi is the sound used for Cow, when 牛 is combined with other kanji, its sound becomed ぎゅう or Gyuu. Gyuu is used for example in the words ギュウにく Beef and ギュウにゅう Milk. Gyuu is a Chinese word and therefor written in Katakana.
